It's called "bedding-in" the pads. It helps prevent pad glazing, aligns the pads with the discs and contributes to a uniform deposit of friction material on the discs.
The method I use is to get the car up to about 45mph and then apply the brakes with firm pressure to slow the car down to <5mph (not stopped) and repeat the process 8-10 times.
Then I bring the car to a stop, take my foot off the brake pedal after placing the car in Park, shut off the engine and allow the brakes to cool completely.
Obviously, this would have to be done on a private road or in an empty parking lot.
