On the red block, I always 'double torqued'. Because you start in the center of the block/head and torque bolts to the outside, the inside bolts will be looser after the outside is done. So, I go back to the inside bolts and verify the torque. Do NOT over torque, you will mash the gasket.
I have never cleaned pistons, except on running engines and using Seafoam or plain water. Most of the carbon will burn off with use.
I hope you oiled the piston rings with the head off and covered it. And moving the crank is not a problem so long it is at TDC when reassembling.
