I do not know what turns your fan on, but look for a switch on one of the radiator tanks - If there is one, take the wires off and short them together.
If you cannot find a switch, I suggest that you go to a dealer - overheating can damage your engine.

How long have you owned the car?
Why did you change the antifreeze?
I had a used '90 744 TI that had a seized fan - In order to help it out, someone had pulled the thermostst open and jammed it sideways.
After I installed a new fan, it would run before I could scrape all the windows on a frosty morning.
