Fan problems? V70-XC70

I bought a 01 v70 T5 with a blown head gasket, replaced the engine with another and I did not know why the engine blew the head gasket, I thought maybe the fan was bad because the car got warmed up and I never heard the fan come on, so, I hooked up my scan gage2 and watched the coolant temp and figured out the fan comes on at 121°,you can't hear the fan over the engine noise but you can see it turning, the Gage on the dash works, Volvo says the Gage has a damper on it so you don't see it move much,
