Usually, when a tstat fails, it is stuck open, thankfully. Your top hose will still get warm.
Not wanting to discourage anyone from thinking outside the box, I can't help much on the idea of using an aftermarket temperature gauge. The tough thing to overcome is fitting the sender that matches the gauge into the head. If you run thread adapters, the probe itself still needs to insert exactly far enough into the coolant flow in the water jacket to be of use.
Stewart-Warner shut down and died in '84 a few years after Opa retired to Florida. What's left is nostalgia marketing on the old popular brand, best I can tell. Just my opinion, of course. Others are welcome.
