Wierd temperature problem. UP and Down. 200 1988

I recently re-intsalled my themostat after having overheating problems in the summer but now when I first start driving the car the temp goes to 3/4 in 5 minutes but then rapidly drops to half. SO much so that I can watch it drop in stages. Could this be the temperature compensation board? Or som other problem.
