The white wires are for the heater element, and it is not polarity sensitive, so yes, they are interchangeable. The prevailing wisdom is that these wires should be securely crimped, not soldered, due to the need for a reference air signal coming from between the strands of the wire.

I just did my 240 a while back-- an easy job with a $10 socket from Autozone (or free with a loaner socket).
