Another alternative would be to take a modern mechanical temp gauge and use the guts to replace the temp gauge in the Volvo cluster. Hack off the round gauge body, pull off the needle, attach it into the cluster housing, glue the needle back on.
The OEM gauge on mine works, but is exceedingly alarmist, spends most of its time in the red. I took it out and used a cheapy 3 gauge cluster mounted under the dash to replace it.
PS: By the sounds of the questions your PV must be finally coming together! Judging by the way those motorcycles you restored looked I'd have to imagine the PV is pretty spiffy.
The old style laquer paint on my car is finally just plain dead. I got tired of waxing it all the time. I think I'm going to satin black the whole thing now, I kind of like that look on an old car.
