Time to dump the Weber...advice needed. 140-160 1971

No, I do not have a water line to the manifold. However even in warmer temperatures it doesn't run any better.
I bought the carb brand new. Had a local shop who has plenty of experience, track and road, re-jet and tune it a while back.
With so many opinions against these Weber's it just seems like switching to a more reliable and proven setup will be an improvement.

I do however welcome your advice for jetting if you have some ideas.
Here are the basics of my motor:
Big bore kit
FI head
IPD street performance cam
Crane electronic ignition
Crane HI-6 Multi spark discharge box
PS 91 coil
VPD header with 2 1/4" exhaust
And of course the progressive secondary down draft Weber
