Making a 142 a ragtop 140-160

Unless you are very experienced in modifications of this sort, it will likely end up looking unfinished and be unpleasant to drive if it ever gets back on the road.
It is not as simple as cutting off the roof and welding in a couple pieces of angle iron. Especially if it was left rusting in a field beforehand.

My gut tells me it will be a complete waste of time and effort and I suspect the car will be left for scrap before you're done.

Do it. It will be learning experience of what kind of project to not take on.
