Steve,

Standard practice is to pull the thermostadt and run the engine without one for awhile. If the temperature comes up and stays in the normal zone, you need to replace the therm. If it still runs super hot, you may have some problem with the water pump or the radiator or a collapsed hose. But, it's probably the thermostadt.
