I recently purchased an 87 740 with a similar problem. Turns out the engine temp sensor and the knock sensor have identical plugs and someone had them swapped! I found this by checking color codes from the ecm. I would bet you have a bad temp sensor or broken wires to same. The gage uses a seperate sender so the gage will read correctly. As soon as I swapped wires the car ran great and gets 20+ mpg on the highway. Good Luck!
