Joe's suggestion for the sheath is helpful, but there are different guages...so you may want to take along a sample and match it up. On a bike they use stranded "wire rope" because they have springs to pull and return the mechanisms, but the small springs on the chokse are just meant to return the choke tube into place (and last time I checked it was not possible to push on a rope).
For the two solid wires inside (its actually one with a loop under the dash), measure the OD and ask for "music wire" at a machinists supply place. Install with graphite grease to keep it working nice and smoothly and from rusting and binding up inside the sheath for a loooong time.
Further suggestions: Anneal with a torch to make the tight loop required under the dash. Barb holding plates to prevent slippage of sheath. See pics at: http://www.intelab.com/swem/checkchoke.htm
