If the SU's are in good shape (don't leak, and the throttle shafts are good) then keep them. However, Strombergs don't wear the throttle shafts as much, and use throttle shaft seals similar to the later SU HIF series.
Strombergs have the same adjustment range as the SU. The needle height is adjusted, as opposed to the jet as in the SU or very early Stromberg. This requires a special tool so that this adjustment can be carried out with the engine running.
Strombergs require balancing just as any pair of carbs do. Once set, they should maintain their balance for some time.
For power and needle availablility the SU is still best.
