You've provided me with lots of information on what affects what, which is very useful. Here are some answers to the various questions you asked:
When replacing the needles, my mechanic did a full tune-up and balance, and I presume that he re-set the valves. I would think that the car is now set up more correctly than before. There is less clackety engine noise.
Does it run "fast" when at idle?
The idle is high, to my ears. I will adjust it a bit lower.
Is the choke fully dis-engaging when the lever is in the full "off" position?
CAN YOU EXPLAIN EXACTLY WHERE TO LOOK TO CHECK THIS PLEASE?
THe car certainly runs well, with a noticeable increase in power from the old carbs. So really I think I just have to get used to the different dynamic and feel lucky that I have a well-running car.
