I'd agree with that. Since this car's a keeper, I'd replace the thermostat and monitor the oil. Simply doing short trips will build up that moisture- it's simply water condensing in the oil a bit. Happens to most cars in the winter, depending on humidity.
The 'stats are so cheap they're not worth testing. Just throw one in for $11 and drive.
If oil/water mess persists after a 50-mile drive, THEN you have a new worry.
