The Volvo B21A engines all used single SU or Stromberg, and with the right camshaft they'll make plenty of power and be very smooth. A single HS6 SU would be my choice for your engine - and the increase in displacement makes no real impact on that choice. My concern is the A camshaft - a very low rpm cam and not really one I would ever choose. If you could find a C cam that would be great, and a D cam is not out of the question either. The A cam will be the limiting factor, not the single carb.
Out of interest I built a Canadian market B23E with the OHC K cam, and 10:1 compression, raised a bit to about 10.2:1 and used a single HIF44 ( 1 3/4 ) carb on it with a ported manifold. It made nearly 140 hp. With a single carb.
Stick with the single, and consider upping the camshaft somewhat.
