Wearng rubber dishwashing gloves gives you a lot of traction on the needle. If that still doesn't do it, I use a scrap of old inner tube between the needle and the pliers. The whole length of the needle outside the piston is a calibrated thing, so there's really nowhere on it that can afford a ding.
