740 cooling anomaly

Even "Closed" water passes through the T stat, you would not get pressure from there.
When you over heated the engine last time did you have the head checked for Trueness before putting a new Gasket on? Aluminum Heads warp easily when
over-heated.

Just for giggles, you may want to go back and retorque the Head. Maybe maybe maybe you will get away with it.
