Picking a B20 head for my 145 140-160

I would use the carb head. It has slightly smaller intake ports and slightly smaller intake valves than the F head, and also higher compression. All that will work better overall with carburetors.

Use the thin head gasket, the .030" nominal (in real life, they crush to about .034").

Exhaust seat inserts started with the '74 K-jet head, so neither of the ones you're considering would have those from the factory.
