There should be a FAQ entry for carbs since much of what you said is above my head! Are the jets and the needles the same things?
I did find a cheat-sheet of sorts for the Weber describing how to adjust the mixture. It involves using a screwdriver to adjust the controls on the side of the carb. I may try that if I feel brave.
