Running rich and running rough

Best bet is to sub a known good AMM.

DO NOT PLUG OR UNPLUG the AMM with the key on.

When you unplug the AMM, the FI ecu switches to the "limp home mode." This is a preprogrammed mode for delivering fuel. During this diagnostic, the AMM is completely out of the equation. If this mode works properly, it provides a reasonable mixture for idle and slow speed, such as 20-25 mph. Above that speed and the engine starves for gas because the ecu doesn't know that more air has been admitted into the motor.

If your car is running rich for some other reason, such as a bad wire or connection to the FI temp sensor or bad pressure regulator, then you'll have power up to a higher speed during limp home mode because of the extra fuel. In other words, the reason for excess fuel is NOT the AMM. If the car behaves as I described -- sags after 20-25 mph during limp home -- then the AMM is suspect.

When you disconnected your temp sensor, it ran worse -- so the sensor appears to be working properly.

The fuel pressure regulator can fail two ways, although it sounds as if you've explored them both. The first way is that it allows the fuel pressure to climb. In that case, the injectors spray more fuel. The second way is a pinhole in the diaphram. In that case, excess raw gas is "inhaled" back through the hose and into the manifold.
