I'm using 6.5" wheels on my 72 145 & have noticed no steering problems. The steering seems a little light even with stock width wheels. The wider wheels can give better traction aslong as they don't hit on cornering,with the apprpriate tires of course. I would keep the stock backspacing of approx.4.25". I don't know if that's accurate. I just measured an old rim. I don't think going to 7" would be a problem though.
