What's your objective in selling a car?
If it's to raise money, sell the 850 or the Dodge. The 740's worth very little in comparison.
If your objective is to keep the cars for a long time or save money, sell the Dodge. The 740's pretty bulletproof, and with the replaced transmission and an AC evap that's still good the 850 will probably outlast the Dodge. You can also do more maintenance yourself on any of the Volvos than on the Dodge so you'll save money there. Taxation depends on your state/locality, and I have no idea how Memphis handles that.
If maximum usability is the goal, sell the 740. If your wife won't or can't drive it, having 50% of your fleet rather than 33% unusable to her might not be such a good idea. She won't have a spare if any of the automatics breaks or goes in for maintenance.
