I agree with George. It depends under what conditions the head bolt broke. If it broke while torquing the head ON, it broke under torque but more importantly: Tension, and so may easily spin out with a vice-grip on the remaining stub. I would try the V-Gs first also...but Pete's trick is good if you need to apply more torque...
If it broke because it is rusted/bound in place in the threads...like when you were REMOVING the head, I would also not attempt ANYTHING until you have given a penetrating oil/ rust breaker a good chance to work (like a week...with reapplications)...then try the V-Gs, and finally Pete's nut trick.
