I've also read that an engine that appears to need a rebuild often only needs new rings.

Only if it's an oil burner with the old one piece oil rings. If it has lost compression & the top ring is broken, it will probably need new pistons.

If you have one that just needs rings, there is nothing stopping you from re-using all the old gaskets & bearings. Bare minimum you need rings, a head gasket & some crank seals.
