So I tested the ECT. With the engine cold (sat outside overnight): 3100 ohms, with the engine warmed up about 280 ohms.

I couldn't reproduce the problem in a few miles of driving. I've resigned myself to driving around with the DMM and waiting for the car to act up. If I can't get it to act up on my way to work or way home tonight, I'll probably drop the cash on the proper fittings to put a schrader valve in the fuel rail in hopes that it may be a fuel pressure related problem.
