I fear that your son will be pretty impatient by the time you find what you want.
My girls learned to drive and finished high school and started college in 5-speed bricks. The 245 was one we bought new so it was in good shape. The 240 was the best I could find around central Calif when I was looking, and I was tickled to find a late model stick at all. It had 250k on it when we bought it for $2300 (I paid too much) but it served us well for four years.
I agree that you should consider an 850 unless you are like me and prejudiced against front wheel drive. Those old 850s were pretty decent vehicles. Very few stick shifts though - I have seen only one.
My bricks both had air bags, but a pre-airbag brick is still a darned good car for a teen. That Volvo understeer will forgive a lot of foolish mistakes. My younger daughter hit the brakes at 60 mph (she said) on a rainy exit curve. The car slid off the road sideways, but straightened itself out and went down the embankment nose first, although she was still panicked and mashing the brake. The car got scuffed a little but she was fine, and she probably would have been all right even if she had hit something.
