Others have made some good arguments in favor of carbs - and if reliability is the priority, SUs are the way to go. Prices for injected bits are only increasing - and if an injection component fails somewhere inconvenient, you may well be without wheels.
If you really still want to do a conversion, it can be done and it isn't really all that difficult. The gas tank issue is one I've heard a number of times, but on my injected 122 there were never any fuel supply issues despite using the stock tank. I ran it well below a quarter tank many times. With overdrive, the car got a consistent 32mpg on the highway.
I wouldn't recommend djet because of the component costs, but this is how one such car came together:
