I wouldn't bother with O2 feedback if you don't need to meet pollution laws. A stoichiometric mixture is most likely to be the one with the lowest emissions, however, it's not the most economical mixture, i.e., you can go much leaner at part throttle & get better MPG, and it's not the most powerful, i.e., you can get more power going richer at full throttle.
