Thinking about getting a 68' 145S, what should I be thinking about 140-160 1968

As I absorb information, I've learned a few things that make me nervous. First are the dual SU carbs. I've heard they're a pain to adjust and keep in working order. Should I be worried, and assume I need to consider switching to a single weber carb?

The other thing are the valve seats. I've read these cars were designed for 100 octane leaded fuel, and when everything went unleaded, they needed to have a harder valve seat installed to keep the upper end from hurting itself. Do I need to be worried about this, and how much of that rebuild work can I do on the head myself?
