Drag coefficient for a 122 120-130

The cam only really kicks in at 3200 rpm or so...

I'd guess you didn't degree the cam in, I'd expect a cam of that size to be pulling hard from 2500rpm. I don't expect you to go for bigger Webers, but I do think you could do better than a pair of 40's with a D-Jet manifold & MegaSquirt.

3350lbs & 97.5mph = 240 Horsepower on my Moroso slide rule, it's a pretty mean thing but, it's says my 2500lb 144 that does 92mph is 150 Horsepower.

How much boost are you at?
